Tender Cactus Tostadas
Cactuses or Nopales, as we call them in Mexico, are delicious… and are a great addition to any healthy diet and lifestyle. Nopales definitely deserve a larger post, but this one will be short and sweet… stay tuned for the next one. This recipe is for when you are in hurry, but still want to grab a tasty bite.
I usually eat these tostadas for breakfast! They are fulfilling and yummy
Ingredients (makes 2 tostadas)
½ avocado, diced or Mexican Guacamole
2 slices of smoked turkey breast, diced (want to make it vegetarian? they still taste delicious with no turkey breast!)
Prepared tender cactus or nopalitos (I recommend nopalitos Doña Maria, you can get them at Whole Foods or at a Mexican grocery store)
1 small bunch of scallions, finely chopped
Spread the guacamole or avocado on each tostada. On top of the avocado, place the smoked turkey breast and tender cactuses. Sprinkle a tablespoon of chopped scallions and crumbled feta cheese or queso fresco on top of each tostada, and garnish with cherry tomatoes. Also try with refried beans.
